I have been using cast iron skillets for many years, and cooking potatoes for many years. However, cooking sweet potatoes in a cast iron skillet took some time to figure out.

The perfect fried sweet potatoes should be slightly crispy on the outside, and perfectly cooked and tender on the inside. So, if you are new to making this delicious side dish, or you are trying to get the perfect, tried and true way, I am here to help you!

I love making these sweet, crispy, golden sweet potatoes at least a few times a week. This is an incredible versatile side dish for any main meal.

What Should I Fry Cast Iron Sweet Potatoes In?

I have tried frying sweet potatoes in a variety of oils, and butter but I believe the secret to great fried sweet potatoes is bacon grease or organic lard.

We get what is called fresh side bacon from our local butcher. It is free from any added ingredients, like sugar and nitrates. If you are completely opposed to using bacon grease or lard, then I would suggest trying butter. However, I know that I don’t get the same results as when I use the bacon grease or lard.

Step 1: Peel the Sweet Potatoes

First, peel and dice your sweet potatoes. You want them to all be close to the same size so that they all cook evenly.

Step 2: Heat the Skillet

When cooking in cast iron, always allow the skillet to warm up before you add your ingredients. For this recipe, turn the stove on medium and allow the bacon grease or lard to get hot.

Use plenty of oil, it should coat the bottom of the pan and be deep enough to fry the potatoes in. Once the oil is hot, throw a layer of sweet potatoes in.

Step 3: Fry the Sweet Potatoes

I usually let mine cook for about 6 minutes, then go and give them one flip. You want to give them time to brown on the bottom. Once you make these a few times, you will learn just how long to leave the potatoes to crisp up to the desired crispness that you love.

Continue to allow the sweet potatoes to crisp on all sides until tender, turning them occasionally as they cook. You can test to see if the sweet potatoes are done by using a fork to see if they are tender on the inside.

Step 4: Add Seasonings

Once your sweet potatoes are finished cooking, add your herbs. Give the sweet potatoes a couple good turns with a spatula to make sure they all get coated well with the seasonings.

Sweet potatoes are one of those foods that everyone has an opinion on. My husband likes them really really crispy and I just prefer a bit of crisp. So, it’s all in preference to your taste.

Tips and Tricks for Cooking the Perfect Cast Iron Skillet Sweet Potatoes

  1. Begin with a well seasoned cast iron skillet. My skillets have been used a lot are very well seasoned. If you aren’t sure how to do this, I share all the details in a post called, How to Properly Season and Care for Cast Iron Skillets.
  2. Pre-heat the skillet with the oil. You will know your skillet is pre-heated if you throw a potato piece in and it sizzles.
  3. Use plenty of bacon grease or lard. You want a nice layer of oil so that the potatoes can get nice and crispy. However, the oil should not cover the potatoes.
  4. Do not ever use a lid. This traps moisture and makes the potatoes soggy.
  5. Cook in small batches or use multiple cast iron skillets. The potatoes should cook in a single layer, not piled on top of each other.
  6. Don’t over flip the potatoes. Wait until the first side is crispy, then flip. Over flipping will cause them to fall apart and stick to the skillet
  7. Season last. Whether you are using the seasonings I suggest or just salt and pepper, season when the potatoes have finished cooking. The seasonings can dry out the potatoes and you don’t want that.

To store leftover sweet potatoes, I put them in a glass storage dish and put them in the refrigerator.

How Do You Re-Heat Leftover Sweet Potatoes?

There are several ways that you can reheat fried sweet potatoes. You can stick them back in a small cast iron skillet and reheat them in the oven. You can also reheat them on the stove top in a skillet.

These pan fried potatoes are a favorite side dish in our home. I often serve them along side some of our favorite main dish meals like homemade meatloaf or oven baked porkchops.

Crispy Pan Fried Sweet Potatoes

Prep Time: 20 minutes
Cook Time: 50 seconds
Total Time: 20 minutes 50 seconds

Ingredients

  • 3-4 Medium Sweet Potatoes, Peeled and Diced
  • Bacon Grease or Lard
  • 1/2 tsp Rosemary
  • 1/2 tsp Thyme
  • 1/2 tsp Sage
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

    Peel and dice sweet potatoes into small cube size. Try to keep them all relatively the same size.

    Preheat a cast iron skillet with grease or lard over medium heat. When the grease is hot, add a layer of sweet potatoes.

    Allow the sweet potatoes to cook on one side for about 5-6 minutes, then using a spatula turn them. Allow them cook for another 5-6 minutes until crispy.

    Continue checking sweet potatoes, turning them occasionally, until they reached the desired tenderness and crispness that you want.

    Mix herbs together, add to the sweet potatoes, using the spatula, turn the sweet potatoes to coat them with the herbs.

    Serve hot. Enjoy!
