Strawberry and Walnut Salad with Feta

This strawberry feta salad is the perfect combination of flavors, featuring baby spinach, sweet strawberries, toasted walnuts, and tangy feta, all tied together with a balsamic dressing.

Ingredients

  • 4 cups spinach + arugula
  • 1 cup walnuts
  • 2 cups diced strawberries
  • ¼ cup thinly sliced red onions
  • few chopped leaves of fresh basil
  • ¼ cup feta cheese
  • salt + pepper

Instructions

  • Wash and dry the spinach and arugula thoroughly. Pat dry with a clean towel or use a salad spinner to remove excess moisture.
  • In a large bowl or on a large platter, evenly spread the spinach and arugula mix as the base.
  • Dice the fresh strawberries into bite-sized pieces and thinly slice the red onions.
  • Scatter the strawberries and onions evenly over the greens.
  • Roughly chop the walnuts (if not using pre-chopped).
  • Sprinkle the walnuts and crumbled feta cheese over the salad.
  • Chop a few fresh basil leaves and sprinkle them over the top for added freshness and flavor.
  • Lightly season the salad with a pinch of salt and black pepper.
  • Drizzle with your homemade balsamic vinaigrette just before serving, or serve the dressing in a separate container on the side for guests to add as they like.
