BBQ Pulled Pork Nachos

These BBQ Pulled Pork Nachos are the perfect way to turn leftover pulled pork into a quick, delicious meal. These nachos feature tender pulled pork, tangy barbecue sauce, and creamy queso, topped with all your favorite toppings for a meal everyone will love.

Ingredients

  • 2 cups pulled pork
  • 1 1/2 cups barbecue sauce divided
  • 12-16 ounces restaurant style tortilla chips
  • 1 cup white queso or shredded cheese
  • 1/4 cup chopped red onion
  • Jalapeños for garnish
  • Cilantro for garnish

Instructions

  • Set your oven to 350°F.
  • Toss the pulled pork with barbecue sauce in a bowl until well-coated.
  • Spread half of the tortilla chips evenly in the bottom of a cast iron skillet. Top with half of the BBQ pulled pork mixture and drizzle white queso over the pork.
  • Sprinkle ¼ cup of chopped red onion on top. Add the remaining tortilla chips, followed by the rest of the pulled pork. Drizzle more white queso over the top and finish with additional barbecue sauce.
  • Place the skillet in the oven and bake for 8-10 minutes, or until the pulled pork is heated through.
  • Top with sliced jalapeños and chopped cilantro. Serve warm and enjoy!
