Slow Cooker Steak Bites with Potatoes

Ingredients

  • 1 ½ – 2 lbs steak top sirloin, round steak, or beef stew meat, cut into bite-sized pieces.
  • 1 ½ pounds baby Yukon gold potatoes halved
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 4 tablespoons butter sliced
  • 1 tablespoon dried basil
  • 1 tablespoon dried parsley
  • 1 teaspoon ground black pepper
  • 2 teaspoon salt
  • 1 teaspoon dried minced onion
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon dried minced garlic

Instructions

  • In a small bowl, combine all the dried herbs and seasonings. This mix will enhance the tender bites of steak and potatoes with a bold, savory flavor.
  • Place the steak on a cutting board and use a sharp knife to trim any excess fat. Cut the steak into bite-sized pieces, about 1 to 1 ½ inches in size. Pat the steak bites dry with a paper towel to help them sear better.
  • Sprinkle half the seasoning mix over the steak bites. Toss the steak to coat evenly.
  • Heat a large cast iron skillet over medium-high heat. Melt 4 tablespoons of butter in the skillet. Add the steak bites and sear on all sides until they develop a golden-brown crust. (If your crockpot has a sear function, you can do this step directly in the slow cooker!)
  • Transfer the seared steak bites to the bottom of the slow cooker. Add the halved baby Yukon gold potatoes on top of the steak. Sprinkle the remaining seasoning mix evenly over the potatoes. Pour in the beef broth and Worcestershire sauce.
  • Cook for 6-8 hours until the beef is tender and the potatoes are soft. If you’re short on time, cook for 3-4 hours, but low and slow yields the best results.
  • Season with additional salt and pepper to taste, and enjoy alongside your favorite sides for a complete meal!

Notes

✔ Steak Preparation – You can add the uncooked stew meat directly to the crockpot, which will cook perfectly over time. However, I prefer to sear mine first in a cast iron skillet with butter for extra flavor.
✔ Cutting the Steak – If using stew meat, you may need to cut some pieces smaller, as they can sometimes be larger than ideal. Aim for bite size pieces so they cook evenly and become juicy steak bites.
✔ Choosing the Right Potatoes – This recipe works well with either gold baby potatoes or small red potatoes. Both varieties hold their shape well during slow cooking and become tender potatoes packed with flavor.
