Ingredients

  • 4 cooked sausages, sliced 1/4 inch thick
  • 12 ounces fresh green beans, trimmed
  • 1 ½ pounds yellow potatoes, cut into 1-inch chunks
  • ¼ cup butter
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon dried minced onion
  • 1 tablespoon dried minced garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  • Preheat the oven to 400°F.
  • Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
  • Wash and cut the yellow potatoes into bite-sized chunks for even cooking. Trim the ends of the fresh green beans.
  • In a large mixing bowl, toss the sausage, potatoes and green beans with melted butter and seasonings. Mix well to coat everything.
  • Spread the seasoned ingredients in an even layer on the baking pan.
  • Place the large baking sheet in the preheated oven and roast until the golden potatoes are fork-tender. Stir halfway through for even cooking.
  • Pair with a fresh salad, green salad, or a side dish for a complete meal.
