Ingredients

  • 3 pounds sweet potatoes
  • 4 links Andouille Sausage
  • 1 tablespoon dried minced garlic
  • ¼ cup melted butter
  • ½ cup shredded Parmesan cheese
  • 2-3 sprigs fresh thyme or 1/2 teaspoon dried thyme
  • salt and pepper to taste

Instructions

  • Peel and dice the sweet potatoes into small cubes.
  • Set your oven to 400°F.
  • Drizzle melted butter over the potatoes and sausage. Sprinkle with salt, black pepper, and fresh thyme. Toss everything together right on the pan until well coated, then spread it out in a single layer for even roasting.
  • Spread everything onto a rimmed baking sheet in a single layer.
  • Bake for 30-35 minutes, stirring halfway through to ensure even cooking. Keep a close eye on the thin edges of the potatoes to prevent burning.
  • Sprinkle fresh parmesan cheese over the roasted potatoes and sausage. Return to the oven for another 5 minutes, just until the cheese melts and turns golden brown.
