Equipment

  • 1 Large Skillet (3 1/2 QT)

Ingredients

  • ½ cup butter
  • 2 pounds boneless skinless chicken breasts cut into 1-inch pieces
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ tablespoon Italian seasoning
  • 1 tablespoon minced garlic
  • 4 cups chicken broth
  • 4 cups uncooked penne pasta
  • 2 cups heavy cream
  • cups freshly shredded Parmesan cheese
  • Fresh parsley for garnish
  • Extra Parmesan cheese for serving

Instructions

  • Heat butter in a very large skillet over medium-high heat. Add chicken in a single layer and season with salt, pepper, and Italian seasoning. Cook 5–7 minutes until golden and cooked through. Transfer to a plate. Do not clean the pan.
  • Reduce heat to medium. Add garlic and sauté 30 seconds until fragrant. Pour in chicken broth, scraping up the browned bits from the bottom of the pan.
  • Stir in uncooked penne pasta. Bring to a gentle simmer and cook 10-12 minutes, stirring occasionally, until pasta is al dente and some of the liquid is absorbed.
  • Stir in heavy cream and simmer 2–3 minutes until slightly thickened.
  • Add Parmesan cheese and stir until melted into a creamy sauce.
  • Return cooked chicken to the skillet and simmer 5 minutes, until heated through and coated in sauce.
  • Garnish with fresh parsley and extra Parmesan before serving.

Notes

  • Use freshly shredded Parmesan cheese for the smoothest Alfredo sauce.
  • If sauce becomes too thick, add a splash of chicken broth or cream to loosen.
  • Rotini or fettuccine can be substituted for penne pasta.
  • Store leftovers in an airtight container for up to 3 days.
