These easy breakfast burritos are packed with crispy bacon, scrambled eggs, melted cheese, and hashbrowns, all wrapped in a warm tortilla. Perfect for meal prep and busy mornings!
Heat a large nonstick skillet over medium-high heat. Cook slices of bacon until crispy, then transfer to a plate, leaving the bacon fat in the pan. Add hashbrowns and cook until golden and crispy.
In a medium bowl, whisk eggs until well combined. Heat a large skillet over medium heat and melt butter. Pour in the egg mixture and scramble gently until fluffy. Grate plenty of cheese and chop green onions.
Lay a large flour tortilla on a clean work surface. Add a layer of hashbrowns, scrambled eggs, crispy bacon, cheese, and green onions. Fold in the sides of the tortilla, then wrap the burrito tightly.
Heat a skillet over low heat and melt butter or use the leftover bacon grease. Place the burrito seam-side down and cook for 2-3 minutes per side until golden and crispy.
Slice in half and serve with a side of salsa and sour cream, pico de gallo, hot sauce, refried beans, or Greek yogurt.
