Breakfast Burritos with Bacon

These easy breakfast burritos are packed with crispy bacon, scrambled eggs, melted cheese, and hashbrowns, all wrapped in a warm tortilla. Perfect for meal prep and busy mornings!

Ingredients

  • 26 ounce bag of frozen hashbrowns
  • 12 ounce package bacon
  • 8 large eggs, beaten
  • 2 cups shredded cheese
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 4 green onions, chopped
  • 8-10 large flour tortillas

Instructions

  • Heat a large nonstick skillet over medium-high heat. Cook slices of bacon until crispy, then transfer to a plate, leaving the bacon fat in the pan. Add hashbrowns and cook until golden and crispy.
  • In a medium bowl, whisk eggs until well combined. Heat a large skillet over medium heat and melt butter. Pour in the egg mixture and scramble gently until fluffy. Grate plenty of cheese and chop green onions.
  • Lay a large flour tortilla on a clean work surface. Add a layer of hashbrowns, scrambled eggs, crispy bacon, cheese, and green onions. Fold in the sides of the tortilla, then wrap the burrito tightly.
  • Heat a skillet over low heat and melt butter or use the leftover bacon grease. Place the burrito seam-side down and cook for 2-3 minutes per side until golden and crispy.
  • Slice in half and serve with a side of salsa and sour cream, pico de gallo, hot sauce, refried beans, or Greek yogurt.

  • Refrigerator Storage: Wrap each burrito in parchment paper and place in an airtight container for up to 3 days.
  • Freezing Instructions: Wrap burritos in plastic wrap, then in aluminum foil, and store in a freezer bag for up to 3 months.
  • Reheating Instructions: Before reheating, thaw the frozen burrito. For the oven, place them on a baking sheet wrapped in foil and bake at 375°F for 15-20 minutes. In the microwave, wrap the burrito in a damp paper towel and heat for 3-4 minutes. If using an air fryer, set the temperature to 350°F and cook for 5-7 minutes until crispy and heated.
