This delicious, yet easy country breakfast skillet is made from scratch with good for you ingredients. A hearty filling meal packed with sausage, eggs and peppers, its a healthy country breakfast.
A country breakfast menu in our home can be homemade buttermilk biscuits smothered in homestyle sausage gravy, bacon and eggs with a side of fried potatoes, a country farmers breakfast skillet or stuffed avocado egg cups. Regardless of what I serve up, I treasure the time that our family has together around the table enjoying a healthy start to our day.
Served along side a cold cup of milk or a hot cup of coffee, this hearty southwest breakfast skillet scramble has become a favorite in our home.

Southwest Country Breakfast Skillet Recipe
This breakfast skillet is super easy to make but also very versatile. You can adjust the ingredients to what your family loves. While we enjoy sausage, you could substitute ham or bacon.
We keep it simple and use peppers for our vegetables but adding in mushrooms or other vegetable would be just as delicious.
We like to use pepper jack cheese on the top of our breakfast skillet, but again, that can be changed to what your family likes.

Kitchen Essentials for Making a Breakfast Scramble
There probably is not a harder working tool in our kitchen than the cast iron skillet. For this breakfast scramble,
I use my large 12″ skillet to take everything from the stove to the table for a one pan meal. If you have never cooked with cast iron,

For whipping the eggs, I like using a large stoneware bowl that holds plenty of eggs for our large hungry family.
A good whisk for whisking the eggs, and a spatula for stirring it all together in the skillet, and you have the essentials for making a delicious homestyle country breakfast skillet meal.
Ingredients for Cast Iron Breakfast Skillet Recipe
- ground sausage
- bell peppers, diced
- minced onion
- minced garlic
- chili powder
- ground cumin
- eggs
- milk
- salt
- pepper
- shredded cheese

How to Make Southwest Breakfast Skillet Scramble
- In a large cast iron skillet, brown ground sausage over medium heat. Use a spatula to break the sausage into small crumble size pieces.
- Once sausage is browned, drain off the grease.
- Add sausage back to the skillet, add in diced peppers, minced onion and minced garlic.
- Cook 5-7 minutes.
- In a large mixing bowl, whisk eggs, until light and fluffy. Add milk and whisk again.
- Add chili powder, salt, pepper and cumin to the egg mixture and whisk.
- Pour egg mixture over the sausage mixture.
- Scramble the eggs and sausage.
- Serve with shredded cheese.

Ingredients
- 1 pound ground sausage
- 1 tablespoon minced onion
- 1 tablespoon minced garlic
- 1/2 cup bell peppers, diced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 12 large eggs
- 1/2 cup milk
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup shredded cheese
Instructions
In a large cast iron skillet, brown 1 pound ground sausage over medium heat. Use a spatula to break the sausage into small crumble size pieces.
