A slice of herb and cheese meatloaf, mashed potatoes, and gravy. It doesn’t get much better than that when it comes to comfort food. My mother made meatloaf quite often while I was growing up and I have loved it ever since, but since I am low-carb and sugar-free, I needed to make my own spin on this delicious classic meal of comfort.

Meatloaf is a great budget-friendly main dish meal. It’s easy to whip up for a weeknight meal since you essentially throw all the ingredients in one bowl, mix them up and then let the oven do the rest of the work for you. While the meatloaf is cooking up in the oven, I prepare homemade, sugar-free ketchup on the stove top. It’s later slathered on the top of the meatloaf for that sweet taste we all love.

How to Make the Best Herb and Cheese Meatloaf

Meatloaf gets a bad rap at times and I truly wish that it didn’t. When it is prepared properly, it’s one of the tastiest meals that you will ever enjoy! There are a few tips and tricks to follow if you want to ensure the very best meatloaf.

  1. Don’t over mix – When it comes to making meatloaf, I use my hands to get all the ingredients mixed together well, but don’t over mix. If you over mix the loaf it will become denser.

  2. Lean Meat – I would suggest using lean meat when making meatloaf. You need the fat for flavor but you don’t want your meatloaf sitting in grease.

  3. Cake pan or Cookie Sheet – For the majority of my life, I have cooked meatloaf in a loaf pan. Then, I discovered the wonderful difference when I switched to using a cake pan or cookie sheet. I promise it just makes it taste better.

  4. Wait to Cut – As with most meat dishes, wait at least 5 minutes to cut into the meatloaf. This allows the meat to retain all the juices and helps ensure that your meatloaf doesn’t crumble.

The Best Herb and Cheese Meatloaf Recipe

2 lbs lean ground beef
3 eggs, beaten
1/2 cup of half-n-half
1 cup grated parmesan cheese
2 tsp garlic powder
3 tsp celtic salt
1 tsp oregano
1 tsp minced onion
1 tsp pepper
1 tsp parsley
1/2 tsp dried sage

How to Make Meatloaf | Simple | Easy | Week Night Meal

Preheat oven to 400 degrees
In a large mixing bowl, add the ground beef.
In a separate bowl, whisk the eggs, then add the half-n-half and mix well.
Add the egg mixture to the ground beef.
Then, add all of the seasonings and parmesan cheese.
Mix until the ingredients are well combined.
Then place meat into a cake pan or onto a cookie sheet.
Bake for 45 minutes or until the meatloaf reaches an internal temperature of 160 with a meat thermometer.

If you choose to add the ketchup to the top of the meatloaf, do this when there are about 15 minutes of cook time left. Remove the meatloaf from the oven, slather with ketchup, and then return it to the oven to finish cooking.

Homemade | From Scratch | Sugar-Free Ketchup Topping

6 oz tomato paste
1/2 cup water
1/4 cup xylitol or sweetener of choice
3 tbsp vinegar
1 tsp celtic salt
3/4 tsp garlic powder
3/4 tsp onion powder
1/4 tsp paprika
1/8 tsp ground mustard

Whisk all ingredients in a small saucepan. Simmer for 30 minutes or until the ketchup thickens. Slather on top of the meatloaf. There will be some ketchup leftover, simply place it in a jar and store in the fridge.
